What you do as a sports nutrition entrepreneur?
I have a split role working as a senior lecturer in applied sports nutrition and as a practitioner in elite sports. The security of a consistent role at a university has allowed me to build a strong network of contacts across sports and the luxury to read or take part in research. I also have great access to labs and technology that I may not have if working totally on my own.
The majority of my work and research is in team sports performance. I enjoy working as part of a multi-disciplinary team using nutrition to support the work of coaches and other sports science staff. I feel being fully embedded into a team allows for a much better connection with everyone and greater buy-in from athletes working on specific goals. Although I have regularly worked in football (soccer) and field hockey, I predominantly work in basketball and cricket. I am also part of the Akolyte group working in esports.
As well as having contracted roles with England Basketball and Sussex Cricket, I have my own consultancy company, ‘Eat Yourself Brilliant’. Originally focusing on the education of good nutrition and the development of resilience in talented young athletes, the company now has a wide range of clients from across sports, the education sector and business. I am also a director of Cast Iron Coffee Roasters, a speciality coffee company founded with my husband Guy.
Some of your biggest challenges
Timetabling is my biggest challenge. Working for several organisations can mean that they all want things in the same week or even on the same day. I write a lot of lists and have a meticulous online filing system to try and keep track of everything I am doing and have done.
The challenge that I am most often asked about by newly qualified students is the uncertainty over what to charge for different services. I have no magic formula for this, though I am getting better at it. I believe that most people will do some work for no fee while they build up a reputation, but you do not want to make a habit of this as it undervalues the service that you offer. Knowing how long different tasks will take you is the key, then choosing an hourly rate you are happy with.
Some of your biggest rewards
Working with young athletes and being part of their journey is rewarding. Recently, I was approached at an event by an athlete’s parents, whom I had supported ten years ago. It was amazing to find out that they credited some of his subsequent success to the knowledge he gained then.
Words of wisdom to newbies.
My main advice would be to know yourself and what you enjoy. Nutrition is a massive field with many fantastic roles you can have. Nutrition support within professional sports can mean long hours, evenings, and weekends, but if you can find a role you love, within a sport you love, it is incredibly rewarding.

Rachael is an Accredited Practicing Dietitian and Sports Dietitian who has a passion for nutrition, teaching and research. Currently, Rachael is a Lecturer in Nutrition and Dietetics at the University of the Sunshine Coast, Australia where she teaches into a variety of first and second year courses.
From a young age food, nutrition and playing sport (mostly softball, squash and swimming) were keen interests. During her Bachelor Nutrition and Dietetics (Honours) she developed an interest in how our individual traits and circumstances impacted on our eating behaviours. Her Honours research focused on Australian dietitians’ perceptions of the healthiness of packaged foods. Through this project Rachael realised research was a great way to combine her interests. After graduating, she had the opportunity to pursue these interests through a USC, scholarship supported PhD.
Rachael’s recently completed PhD centered on the development and validation of an Athlete Food Choice Questionnaire that could be utilised with a sporting and culturally diverse group of athletes. Her research sought to translate current knowledge on the multifactorial construct of food choice into a questionnaire for practitioners, researchers and individual athletes to examine the relative influence of various factors on food choice. Through this project Rachael was fortunate to get to collect data at the 2017 Universiade (Taipei, Taiwan) and 2018 Commonwealth Games (Gold Coast, Australia). At these games she was also part of the Nutrition Service Team that provided training and advice to the caterers. Additionally, she helped host the nutrition desk within the athlete’s dining hall, where she assisted athletes with food selection and individual consultations.

Role as a PINES Executive Assistant
As an executive assistant for the communications committee, I provide support such as compiling the monthly newsletter which aids PINES to share featured articles, member resources, the latest in nutrition research, as well as sharing professional opportunities.
Caitlin Edmonds, a member of the PINES Communications Committee, first developed an interest in sports nutrition during her time as a young athlete, fascinated by the role food had to play in elite performance. This led Caitlin down the path of completing a combined degree of a Bachelor of Exercise and Sport Science, followed by a Masters of Nutrition and Dietetics. Through these studies, Caitlin grasped the absolute necessity for the presence of qualified nutrition professionals within all athletic performance environments.
Caitlin came to join PINES after completing her Masters Research Project at the University of Sydney, under the supervision of the late Associate Professor Helen O’Connor. This project, with the wealth of knowledge shared by her team of experienced supervisors, provided her with exposure to elite sports nutrition around the world and highlighted the enormous benefit of collaboration amongst sports nutrition professionals. This unique exposure to sports nutrition encouraged Caitlin to establish a sports focused career path.
Throughout her studies, Caitlin also had further engagement with the sports nutrition field through an internship, which eventuated into her first Dietitian role working with elite and emerging athletes in sports such as soccer and netball. This provided Caitlin with first-hand experience in applying sports nutrition theory into tangible health and performance strategies to support athletes in excelling within their sports. This role also provided invaluable insight into navigating the Dietitian role within a sports multi-disciplinary team.
Caitlin has since expanded her roles within the nutrition industry, continuing to work with athletes within private practice and team sport roles, with a specific focus in the development of younger and emerging athletes. She has also recently commenced work as a casual academic at the University of Sydney, sharing with student Dietitians her learnings in entering and working within the profession. Caitlin is passionate about the importance of knowledge sharing and productive discussion amongst nutrition professionals to continue to strengthen the field and develop as practitioners. For this reason, Caitlin feels incredibly lucky to be a part of PINESand its role in encouraging global communication in the industry.

Growing up in South Africa, Sarah is acutely aware of the role, power and impact of sport. Sarah’s first step towards working in sports nutrition (MSc Exercise Science, University of Cape Town) coincided with South Africa hosting the Soccer World Cup, and has continued since then. Sarah started to work with athletes while completing her MSc at the practice of Shelly Meltzer and Associates and slowly developed and built on turning the theory into practice. Having both a mentor and collaborating with a team of dietitians was a vital phase for Sarah’s development.
Being based at the Sports Science Institute of South Africa was important for Sarah as it allowed for both exposures to athletes of all sports, sizes and backgrounds, but also to improve her understanding of the multidisciplinary approach towards sport. Sarah has a strong belief in the power of the relationships around an athlete and enjoyed working with other professionals to optimise the holistic management of athletes. A part of Sarah’s work within adolescent rugby was developed and led to her presenting a model for Nutrition Literacy in adolescent athletes at the annual meeting of the South African society of Sports Medicine (SASMA) in 2017. Improving evidence based practice and the relationships within nutrition professionals in South Africa, Sarah was part of the team from the practice to organise a conference for those working in sport across the country in the same year.
In late 2017, Sarah was considered for a funded PhD at the Rugby Research Unit based at Leeds-Beckett University in the United Kingdom, and took the opportunity for both advancing her research profile and for professional development. Her PhD is focused on the impact of rugby based training on the markers of gut permeability and gut damage.
Part of her PhD includes being the lead performance nutritionist for the Yorkshire Rugby Academy and co-ordinating their nutrition education program and athlete management. Other roles now include teaching activities at the university and continuing to promote evidence based practice for all nutrition students.
Role as a PINES Global Representative
As a global representative I aim to promote PINES to other nutrition professionals in my region. I want to continue to help new nutrition professionals to develop networks that will help promote better sports nutrition practice and collaboration across the region.

In addition to various other affiliations, recognitions and awards, I have been awarded as the “Best Nutritionist of the Year 2013”, by Vogue Magazine. I have also most recently written and published a book for Random House on Sports Nutrition titled “The Athlete in You”.
Besides being a practicing sports nutritionist, I am lecturer, columnist, a fitness enthusiast and a mother. I am marathoner, swimmer and HIIT workout lover.
Finally, to sum it up India is slowly becoming aware and taking the profession of Sports Nutrition more seriously. As a representative of PINES I am thrilled to work closely with global partners in order to broaden the organisation’s reach bring awareness to the sports nutrition profession in this vast country.
Johanna, a PINES representative to South and Central America, started her academic and experience toward sports nutrition when she was an athlete and represented the Colombian volleyball team in international events. This gave her an opportunity to focus on sports nutrition during her study in human nutrition at Javeriana University, Colombia and deepen her knowledge. By the time she was studying in her final year, she had been working with swimmers, tennis and soccer players through an internship. She learned about athlete assessment as part of a wider professional team and developed many professional skills. The wide experience obtained allowed her to apply for a job in sports nutrition in Bogotá. After that, she specialized in sports administration in Colombia and completed a sports nutrition certificate in Spain. Currently, she is a candidate for IOC diploma in Sports Nutrition in 2020.
Johanna has worked for the Colombian Olympic Committee and Sport Ministry for 5 years supporting an interdisciplinary approach and nutritional assessment in Paralympic sports, young athletes and elite athletes. She uses a wide range of nutritional strategies to support athletes including:
Johanna has participated within the Colombian medical team at the Paralympic Games in London 2012, South American Games in Bolivia 2018, Central American and Caribbean Games in Colombia 2018 and Pan-American Games in Peru 2019. Currently, her aim is to connect sport nutritionists in Colombia to strengthen knowledge and professional experience to be increasingly visible to the world. Because of this, she is a member of PINES seeking to become a “bridge” between Colombian nutritionists and the PINES community around the world.
Role as a PINES Global Representative
As a PINES global representative she has promoted sports nutrition updates and PINES with nutritionists in her country using the web and social networks. Johanna has also contributed to a food factsheet for Colombia (you can see the factsheet here).

Daphne Wu, our Asia’s Global coordinator, was born in Hong Kong where sports nutrition is only starting to become recognized as a profession. She found her interest in exercise and sports nutrition when she practiced taekwondo at the University of Hong Kong. She noticed that many taekwondo players used improper weight making methods before competition. During her postgraduate study in Dietetics, she had already considered developing her career in sports nutrition. Daphne said “I feel the efficacy of dietary interventions on many diet related diseases are underrated here and these diseases might completely be treated by medication one day in future. The sports world may be the place to better demonstrate the importance of dietary intervention.”
After graduation, Daphne started her work in hospital and medical centres as a dietitian. She then completed her Masters degree in the area of glycaemic index and exercise performance under the supervision of Prof. Stephen Wong at the Chinese University of Hong Kong during her limited spare time. Afterwards, she taught nutrition, exercise and weight management in a school of continuing education while continuing her dietitian work. Daphne provided dietary consultation to apprentice jockeys and monitored their diets. She found that some of these adolescent athletes struggled with their body weight and had certain behaviours of disordered eating and worked with the other professionals to deal with these dietary problems. Daphne wanted to further explore the area of sports nutrition more and thus she took the International Olympic Committee (IOC) Diploma of Sports Nutrition. She was in the first batch of graduates. She still remembers director Ron Maughan mentioning at the graduation ceremony that the IOC course would have more upcoming graduates, but the first batch of graduates only happened once.
Prof. Ron Maughan and Dr. Susan Shirreff at the graduation ceremony of the IOC Diploma of Sports Nutrition.
After working for years, Daphne decided to pursue a doctoral degree. She said “It is a hard decision to quit the jobs and then go back to study full time. Besides providing dietary advice to special groups of people with dietary needs, I want to educate more people proactively.” Without giving up her interest in sports nutrition, Daphne turned her research interests towards the glycaemic index and exercise as well as cognitive performance under the supervision of Prof. Craig Williams and Prof. Jo Bowtell at the University of Exeter. She also took time to complete the Learning and Teaching in Higher Education Programme during her Ph.D. study and now is an Associate Fellow of Higher Education Academy. Daphne said there were many memorable moments and things besides study. The back-to-school period helped her become familiar with British foods and food cultures. She got involved in the London Olympic Games 2012 and has enjoyed meeting her IOC colleagues at scientific conferences.
Daphne is now working in a tertiary institution in China. She is teaching exercise related courses covering nutritional strategies for endurance and weight making exercises, nutrition, and food science. Moreover, she is supervising students regarding dietary intake of collegiate athletes before and after the Summer Universiade (World University Games), nutrition and health, and food security.
Role as a PINES Global coordinator.
As a global coordinator, Daphne wants to deliver more evidence-based nutrition information via PINES to professionals in China working in the fields of exercise and sports nutrition. Accessing information is challenging and build up the critical thinking skills to evaluate the massive amount of information over the internet takes time. She would also like to connect with others in Asia who share common foods and food cultures. PINES is grateful to Daphne for preparing the international food factsheet that will assist athletes and their sports nutritionists as they prepare for travel to China.
Catalina Fernandez, our America’s Global coordinator, started her career in sports nutrition as an athlete; being a former volleyball player for the Costa Rica national team. This had her questioning the impact diet had between other players from big teams that looked and performed different from hers.
She decided to pursue a degree in Human Nutrition in Costa Rica, where no sport nutrition class existed, so her real career started when a professor from the Human Movement School “adopted” her for the thesis project. He helped her obtain a scholarship for a master’s degree in the US and introduced her to international conferences, like the ACSM Annual Meeting, where she met personalities in the field like Louise Burke, who guided her into taking the IOC Diploma.
Employed by the Costa Rica Olympic Committee in 2015, she started developing the Nutrition Department and a sports nutrition culture in general around the different sports, with the philosophy of working side by side with athletes and coaches on the field, bringing science into practice in their daily routines. Her work lead her to be the first sports dietitian to assist Team Costa Rica at the Olympic Games, in Rio 2016.
Being able to show how nutrition and the guidance of a sports dietitian impacts the performance and preparation of elite athletes, nowadays, the Nutrition Department grew to the point of employing two more dietitians, having the chance to expand the attention to more sports and starting some level of specialization. Besides working on the preparation of athletes from sports like boxing, surfing and cycling on their road to Tokyo, other projects being developed right now are:
Role as a PINES Global Representative
As a global representative I help to promote PINES to other nutrition professionals in my region. I have also just completed an international food factsheet for PINES to assist athletes and their sports nutritionists prepare for travel to Costa Rica.
