Dr. Cas Fuchs is a scientist and teacher at the department of Human Biology at Maastricht University Medical Center+. During his PhD he investigated the effectiveness of several strategies for post-exercise recovery, focusing on carbohydrate and protein metabolism, as well as the effects of muscle cooling and heating. Currently, he continues to perform research in the areas of exercise and nutrition metabolism, with a primary focus on carbohydrate and protein metabolism and body composition. For most of his research, Cas uses state-of-the-art techniques such as stable isotope tracer methodology and Magnetic Resonance Imaging/Spectroscopy. Cas has attended several national and international conferences and was awarded several prestigious awards, including the GSSI Sport Nutrition and Young Investigator awards at the European College of Sports Science (ECSS) and the International Student and Young Investigator in Sports Nutrition awards at the American College of Sports Medicine (ACSM).

After finishing his studies in Nutritional Physiology and Health Status, Martijn Redegeld started to work in professional cycling in 2017. Martijn currently leads the Performance Nutrition Department at Team Jumbo-Visma, where he is responsible for improving performance, recovery and body composition via nutrition. As integrated part of the coaching and performances staff of the team, Martijn as daily contact with the riders and staff members in order to create and integrate personalized fueling, recovery and supplement strategies that meet the needs of the riders throughout the year all across the world.

Patrick Wilson is an Associate Professor of Exercise Science at Old Dominion University, where he also directs the Human Performance Laboratory. Dr. Wilson has published over 70 scientific articles, primarily in the areas of nutrition, gut issues in athletes, hydration assessment, and exercise performance. He is also a credentialed Registered Dietitian. In 2020, Dr. Wilson published a book, The Athlete’s Gut, which has garnered significant international attention. In his spare time, Dr. Wilson enjoys running and competing in races.

Jamie Whitfield earned his PhD in exercise physiology and muscle metabolism from the University of Guelph (Canada) and is now a Research Fellow in the Exercise and Nutrition Research Program at Australian Catholic University (Melbourne, Australia). His research utilises a variety of research models to gain a better understanding of how nutrient availability alters skeletal muscle metabolism, and whether it can promote or inhibit training adaptation and, ultimately, human performance. He is currently a member of the editorial board for the American College of Sports Medicine’s flagship journal Medicine & Science in Sports & Exercise and is an Exercise and Sport Science Australia (ESSA) Accredited Sport Scientist (ASpS2).

Management and Prevention of Iron Deficiency in Athletes: What’s New? By Alannah McKay, PhD, Australian Catholic University (Australia)

Alannah McKay completed a Bachelor of Science (Exercise, Health and Sports Science) at the University of Western Australia in 2014. Subsequently, Alannah completed a post-graduate position within the Physiology department at the Australian Institute of Sport, where she was involved in the preparation of many Australian athletes prior to the 2016 Rio Olympic and Paralympic games. Since, Alannah has submitted her PhD titled “The Effect of Dietary Manipulation on Iron Metabolism and the Immune System in Elite Athletes”, which was undertaken in partnership with the Australian Institute of Sport, Western Australian Institute of Sport and the University of Western Australia. Alannah joined Australian Catholic University as a Postdoctoral Research Fellow in 2020. Her research has continued to explore the impact of diet and exercise on a range of health outcomes in athletes, with a specific interest in iron metabolism and female athletes.

Dr. Stuart Phillips is a Professor in the Department of Kinesiology and a member of the School of Medicine at McMaster University. He is a Tier 1 Canada Research Chair in Skeletal Muscle Health. Dr. Phillips’ work centers on the interaction of exercise/physical activity and nutrition in skeletal muscle and body composition. Dr. Phillips is a fellow of the American College of Sports Medicine (ACSM) and the Canadian Academy of Health Sciences (CAHS). He has delivered over 350 public presentations, including more than 60 keynote talks, to academic institutions local, national, and international audiences on five continents.

Dr. Jan-Willem van Dijk leads the Sports and Exercise Nutrition team at HAN University of Applied Sciences, the Netherlands. In addition to his educational role and research endeavors, his team offers specialized nutritional counseling to elite athletes, such as those competing at the Olympic and Paralympic levels. The synergy between practical application and scholarly inquiry allows for the direct translation of new research findings into enhanced nutritional practices, benefiting both athlete performance and student learning. Dr. van Dijk has a substantial publication record, with more than 35 articles in peer-reviewed journals. His current research focuses on understanding the energy and nutritional requirement of athletes, establishing the role of bone health and body composition in overall health and performance, and developing dietary strategies to optimize athletic health and performance.

Dr. Kalman is a Clinical Associate Professor in the Dr. Kiran C. Patel College of Osteopathic Medicine at Nova Southeastern University in Fort Lauderdale Florida. Dr. Kalman is also Co-founder and Co-director along with Dr. Susan Hewlings of Substantiation Sciences, a strategic nutrition business consultancy. Additionally, Dr. Kalman was a co-founder of the International Society of Sports Nutrition (ISSN). Most recently, Dr. Kalman served as the Senior Vice President of Scientific and Regulatory Affairs for The Natural Products Association (NPA). Earlier in his career, Dr. Kalman was the VP of Scientific Affairs for Nutrasource, a nutrition-centric Contract Research & Service Organization. He has worked six Olympic games and with a multitude of teams and individuals on the collegiate and professional sport levels. Historically, Dr. Kalman has been involved in over 400 clinical trials and projects within the pharmaceutical, medical and exercise – nutrition fields. He has published over 80 peer-reviewed manuscripts, more than 90 abstracts/poster sessions and has authored or co-authored five academic textbooks. He has been interviewed on various media outlets such as NBC, MSNBC, CBS Evening News, CNN, Discovery Channel plus others along with a host of other media outlets.

From foundations to peaks: Building and growing performance nutrition services, programs and departments, by Katie Knappenberger, MS, Northwestern University (USA)

Katie Knappenberger is the Program Director for Performance Nutrition at Northwestern Medicine. She has been leading the performance nutrition services for Northwestern University’s varsity athletic programs for nearly a decade. Katie is also the current president of the Collegiate and Professional Sports Dietitian’s Association. Katie is a Board-Certified Specialist in Sports Dietetics, a Registered Dietitian, and a Certified Athletic Trainer. Katie earned degrees from the University of Utah and the University of Wisconsin-La Crosse. She resides in Glenview Illinois with her husband Ryan and daughters Riley (7) and Parker (4). This presentation will share how Northwestern University’s Performance Nutrition program has grown and developed over the past decade. It will provide participants with inspiration and a framework for building, growing and managing performance nutrition programs of their own. Topics will include developing a mission and vision, establishing a service model, capturing advocacy data, building relationships with key stakeholders, advocating for growth, and supporting a staff of dietitians.

A former professional Rugby League player, Graeme is now Professor of Human Physiology at Liverpool John Moores University. His research is focused on basic and applied sport nutrition where he has published over 160 papers and review articles. Graeme’s current research areas are the effects of Vitamin D and cannabidiol (CBD) on muscle function, the effects of weight-making on health and performance, and the metabolic and nutritional demands of elite sport. Graeme is a fellow of both the British Association of Sport and Exercise Sciences (BASES) and The European College of Sport Sciences (ECSS). Graeme is the head of nutrition to England Rugby and The DP World Tour Golf & Ryder Cup Team. Graeme regularly appears on television (BBC Trust me I’m a Dr, ITV Truth about food) and radio (BBC Radio 4, BBC Radio Merseyside) discussing nutrition for health and sports performance.
